From Kastoria to Halkidiki, we move our hives across Northern Greece to produce our Organic Conifer & Chestnut Blossom Honey.
In early spring, our bee colonies travel through selected regions of Northern Greece, following successive wildflower blooms. This allows the colonies to grow naturally and reach strong populations. Later, at 650 meters altitude in the mountains of Kastoria, the bees collect nectar from a wide range of wild blossoms such as acacia, wild clover, linden, mountain tea, wild thyme, and many more.
The journey continues as we transport the hives—already rich with this diverse nectar—to the mountains of Halkidiki. There, at the end of summer, Sakis harvests our Organic Conifer & Chestnut Blossom Honey.
The floral nectar contains pollen from many different plants, creating a naturally complex and aromatic bouquet. This rich aroma blends harmoniously with the mild, neutral taste of the conifer forests where our bees complete their final honey-making cycle.
The result is a honey with:
unique aroma and layered flavor,
a thicker texture compared to typical blossom honeys, thanks to the conifer influence,
and a slow crystallization rate, usually taking up to a year.
