For the production of our Organic Polygonum & Conifer Honey — the jar with the purple-hive label — we move our hives from the plains of Kilkis and Polykastro to the mountains of Halkidiki in Northern Greece.
Polygonum (known locally as polýkombo) is a wild, self-growing herb that produces tiny purple blossoms. It does notgrow in cultivated land; it appears only in natural, uncultivated areas. The plains of Polykastro and Kilkis are among the richest regions in Greece for wild Polygonum. For the plant to thrive, it requires rainfall in early to mid-August — only then can we harvest true Polygonum honey.
After the period when the bees gather nectar from the Polygonum blossoms, we transport the apiary to the forests of Halkidiki, where the bees collect honeydew from conifer trees. By September, Sakis can harvest the Organic Polygonum & Conifer Honey.
The abundant Polygonum flowering provides both nectar and pollen, which are essential for the development of the colony. Late August to early September is a crucial time when many new colonies, formed in early spring, must strengthen enough to survive the winter. These colonies are then moved to the pine forests of Halkidiki to collect the honey they need for the colder months.
Depending on the year and the level of honeydew secretion from the conifers, Sakis harvests the final blend: Organic Polygonum & Conifer Honey, a rare and nutrient-rich Greek variety.
Organic Wild Polygonum (Knotgrass) & Conifer Honey is the richest Greek honey in enzymes. It has a high concentration of mineral salts, folic acid, and iron.
